WATCH: Community Members Cook Goat Biryani for Bengali Schoolchildren
If you’ve ever been to an Indian or Bangladeshi restaurant, you may have enjoyed Bengali cuisine. But have you ever seen anyone cooking goat biryani firsthand?
Goat biryani is a traditional Bengali dish made from goat meat, rice, and various spices. It’s unclear exactly where it originated, but it was mostly likely in Hyderabad, India. Others say it traveled to India from Persia, or perhaps was eaten by royals at some point during the Mughal Empire. Besides goat meat, chicken, mutton, or beef is often used.
In the video below, a group of high school students decided to make a gigantic amount of this delicious dish for local schoolchildren in Bangladesh. But it’s definitely a group effort to make food for 100 kids, so the whole community pitched in.
The cooks use traditional methods to make the biryani. After the goat is slaughtered, they grind down cumin, onion, ginger, and garlic to make paste. Then they add in milk, green chili, cardamom, cinnamon, rose water, and basmati rice. Lastly, the goat meat — already cooked with the onion and garlic paste — is added to the pot. With a few finishing touches (sugar, salt, clarified butter), the biryani is done.
